I'm having a movie night and I want to knock the socks off everyone who's coming over. What would you suggest? I'm looking for a movie that sounds amazing and looks visually stunning.
They have already picked Gladiator as the first movie but I need 1 more.

Are you sure they'll be up for two movies? Gladiator is about three hours long, if I remember correctly. Anyway... looking at your list, I'd suggest X-MEN. Or if you want to show off the color vibrancy of your system, I'd go with either Bugs Life or one of the Toy Story movies. They don't follow up well to Gladiator though.
I seem to remember watching the Wallace and Grommit disc before the movie last time I had people over to watch Gladiator.

I didn't think that Gladiator was visually stunning, but it does have a good dts track.
How about The Matrix instead?

I wouldn't play The Matrix... Seems too cliche for a movie night. Go instead for something with more sensibility yet with good action like Crouching Tiger, Hidden Dragon. Gladiator might indeed fit this also. Other movies that would appeal to a wide audience? How about The Sixth Sense or a comedy like American Pie... Just some suggestions.

Play Chapter 14 from Charlie's Angels for an appetizer.
Choose one of these recommendations for the main course:
Gladiator - Opening Battle
Die Hard - Willis/Gudonov Battle
Aliens - Start from where Hudson goes down, and let it run 'til the credits. :)
The Blues Brothers - Anything following the "big" concert.
Braveheart - When Mel comes back to the village lookin' for his wife...
