Using either the Panasonic AE700U or Sanyo PLV-Z3, if I opt to take the video from the DVD player (Pioneer 59AVi, Denon 2910/3910, etc.) to the PJ via HDMI, will I be able to also take the sound from the DVD player to the reciever via optical or will the use of HDMI prohibit this being that HDMI also carries the sound?

AFAIK, presently HDMI configurations only pass video even though the connection is designed to do both. So....yes.

i have a denon 2910 connected to a panasonic 7-series plasma via hdmi, and feed the audio via optical cable into my av receiver, so in other words, yes, using the hdmi connection does not stop the other audio outputs fom working.
