I like lord of the rings. They're dts-es discrete, too (a slight bonus if you have the neccesary decoder). Das Boot is rumored to have a good dts doundtrack, but the superbit edition is difficult to find. Almost Famous is nice, but I'm not suure if the dts is that much better.
Usually, I default to dts, and fall back to Dolby Digital if I need to use "midnight modes."
For me, Saving Private Ryan is still the benchmark against which all other soundtracks are measured. Despite the many other excellent soundtracks that have been produced since, I always think of SPR as my reference disk.

I'm a big fan of many mentioned already and would like to add Blade II.......incredible DTS-ES track. That track will make your equipment work and keep you in the action to be sure!
These are great ! Thanks !! Ive got most of these discs , I'd love to find Galaxy Quest in DTS !! Those universal DTS discs are a real pain in the ass to find !

I completely agree with Billy C. on this one. Saving Private Ryan still holds the title in my book even though there are some very worthy contenders out there. The Haunting still has the deepest bass of all, but the overall track on SPR is my favorite to this day. I do have very high hopes for the upcoming War of the Worlds DVD because not only is it DTS and done by Spielberg(just like SPR), but it was the best sounding movie I've ever heard in the theater. If the disc sounds anything like the cinema experience I had there may be a new reference disc in my collection.
I would also suggest that if you're in a music mood, The Eagles: Hell Freezes Over always impresses anybody I've ever played it for...including myself!
