The proper way to listen to a "stereo" film on DVD is to let your processor auto-detect the format, and if it stays 2.0, then you should manually engage Dolby ProLogicAgreed, and the reason for this is that the person doing the mastering can forget to set the bit that tells the pro-logic decoder that the DVD is pro-logic encoded and to turn itself on.
If the soundfield collapses into the center channel when you do this, then the left and right channels are carrying an identical signal, in phase. (Mono, in other words). This should be reproduced by the center channel as that is the way it was reproduced in the theater.
If the soundfield get very diffuse and sounds like you are listening in a barrel, and goes primarily to the surrounds, then the individual mastering the DVD has screwed up and inverted the phase of one of the channels. (And yes, I have heard DVD's with this problem).
