I believe you'd be able to do that except that you'll also need to hook up your DVD player to your receiver using component cable. You can't really "down-convert" from HDMI to component.
I think you might be able to find an adaptor to connect DB25 to 6 RCA connectors. Google on "DB25 to 6 RCA". Then you should be able to connect your Onkyo to any pre-amp or receiver with 5.1 preout.
